Lemon Pepper Chicken

This is one of my favorite dishes recently. Super easy to make and comes out great every time!

Ingredients:

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 1 lemon, zested and juiced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried parsley
  • 1 teaspoon dried oregano

Instructions:

  1. Preheat your oven to 400Ā°F (200Ā°C).
  2. In a small bowl, combine the olive oil, lemon juice, lemon zest, garlic, salt, black pepper, parsley, and oregano. Mix well to create the marinade.
  3. In a shallow dish, place the chicken breasts and pour the marinade over them, turning the chicken to coat it evenly. Cover the dish and marinate the chicken in the refrigerator for at least 30 mins or up to 8 hours.
  4. Heat up a cast iron skillet over medium-high heat.
  5. Once the skillet is hot, carefully place the chicken breasts in the pan and cook for 2-3 minutes on each side or until they are lightly browned.
  6. Put the skillet in the preheated oven and roast the chicken for about 15-20 minutes, or until it achieves an internal temperature of 165Ā°F (74Ā°C).
  7. Remove the skillet from the oven, and let the chicken rest for a few minutes before slicing and serving.
